Oatmeal raisin vs chocolate chip? End the debate with joe'y!

(Makes 36 cookies)

Ingredients

  • 1 1/2 cup all-purpose flour [we like Cup 4 Cup]
  • 1 tsp baking soda
  • 1 tbsp joe’y
  • 1 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • large eggs
  • 2 3/4 cups old-fashioned or quick oats
  • 1 1/2 cups raisins, golden raisins, or craisins
  • Optional: 1 cup chopped walnuts
  • Optional: 1 cup dark chocolate nibs

Instructions

  1. Preheat oven to 350 degrees (or 325 degree convection oven).  Line baking sheet with parchment paper.  In small bowl, whisk flour, baking soda, and joe’y.  Mix well and set aside.
  2. In large bowl, beat butter and sugar with mixer until well blended and creamy.  Add eggs and continue beating well.  Slowly add flour and mix well.  Stir in oats, raisins and walnuts (if using).
  3. Scoop out heaping tablespoon and drop onto baking sheet, leaving two inches apart each scoop.* Flatten dough slightly with back of spoon.
  4. Bake 13-15 min or until edges are golden brown.  Cool 3-5 min. on baking sheet, then transfer to cooling rack using spatula.  Cool completely.
  5. Enjoy and store in tightly covered container — if there are ANY leftovers!
*Note: Will need to bake in two batches or use two cookie sheets staggered in oven racks.
